Method

Prepare glass & sugar

If using simple syrup

Add 1/2 teaspoon simple syrup to an old-fashioned (rocks) glass. Add 3 dashes of Angostura bitters and stir gently to combine.

If using a sugar cube

Place the sugar cube in the old-fashioned glass. Add 3 dashes of Angostura bitters directly onto the cube and 2–3 drops of water. Muddle until the sugar is mostly dissolved and forms a slightly syrupy paste.

Build the cocktail

Add 2 oz Sheringham Whiskey to the glass over the syrup or sugar paste. Stir gently with a bar spoon for about 20–30 seconds to chill and slightly dilute the drink (aim for a glossy, slightly viscous consistency).

Add a large ice cube (or several large cubes) to the glass after stirring, then give one gentle stir to marry temperature without over-diluting.

Garnish & serve

Express the oils from an orange peel over the drink by holding the peel skin-side down 2–3 inches above the cocktail and giving it a firm twist so the oils spray onto the surface. Rub the peel around the glass rim and drop it into the drink as garnish.

Serve immediately. Optionally offer an extra dash of bitters on top or an additional orange twist for aroma.
