Chill glass

Place a champagne flute or coupe in the freezer or fill it with ice water while you prepare the cocktail to ensure it’s well chilled.

Shake spirit, citrus, and syrup

In a cocktail shaker, add 2 tablespoons (approx. 1 oz = 2 tbs) Wayward Unruly Gin, 0.75 oz fresh lemon juice, 0.5 oz simple syrup, and a generous handful of ice (about 1 cup). Seal the shaker and shake vigorously for 10–15 seconds until the exterior is cold and slightly frosted.

Strain into flute

Discard the ice water from the chilled flute (if used). Double-strain the shaken mixture into the chilled champagne flute using a fine mesh strainer or the shaker’s strainer to remove small ice shards and any pulp.

Top with sparkling wine

Carefully top the flute with 3 oz chilled Charme de L’Ile sparkling wine. Pour slowly down the side of the glass to preserve effervescence and avoid excessive foaming.

Garnish and serve

Express a lemon twist over the drink by holding the twist skin-side down over the glass and giving it a quick squeeze to release oils. Run the twist around the rim and drop it into the flute (or hang on the rim). Serve immediately while effervescent.
