Glass preparation

Select a large wine glass (or stemmed goblet). Fill the glass three-quarters full with fresh ice cubes to chill the glass and maintain proper dilution.

Build the drink

Pour 3 tablespoons (about 45 ml) Aperol over the ice directly into the glass.

Add sparkling wine

Slowly pour 90 ml Unsworth Charme de L’Ile sparkling wine (or similar dry Prosecco) into the glass. Pour gently over the back of a spoon or down the side of the glass if you want to preserve some carbonation.

Top with soda

Add 30 ml club soda to top the cocktail. This adds a light effervescence and balances the sweetness of the Aperol.

Stir gently

Using a bar spoon, gently stir the cocktail once or twice to combine ingredients without losing too much effervescence.

Garnish and serve

Place one fresh orange slice on the rim or float it in the drink. Serve immediately while sparkling and cold.
