Crisp pilsner brewed with Weyermann pilsner malt, Augustiner yeast.

Begin by crushing the Weyermann pilsner malt to expose the starches for mashing. Use a grain mill for best results.

In a large brew kettle, bring 5 liters of filtered water to a boil.

Once the water is boiling, remove it from heat. Add the crushed pilsner malt to the water and stir thoroughly.

Allow the mixture to steep (mash) for 60 minutes at around 65-68°C (149-154°F).

After the mashing period, heat the mixture back to a boil. Once boiling, add the Cascade hops and boil for 60 minutes.

During the last 15 minutes of the boil, add the Citra hops to the brew for aroma.

After the boiling is complete, cool the wort rapidly using a wort chiller or an ice bath.

Once the wort is cooled to room temperature, transfer it to a sanitized fermentation vessel and pitch the Augustiner yeast.

Dissolve the corn sugar in a small amount of boiling water and add it to the fermentation vessel to carbonate the beer.

Bottle the beer using sanitized bottles and caps, and allow it to carbonate for at least 2 weeks at room temperature.
