Prepare the Collard Greens

Wash the collard greens thoroughly to remove any dirt. Remove the tough stems and chop the leaves into bite-sized pieces.

Sauté the Aromatics

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until softened. Stir in the minced garlic and cook for another minute until fragrant.

Add the Collard Greens

Add the chopped collard greens to the pot, stirring to combine with the onions and garlic.

Add Liquid and Seasoning

Pour in the vegetable broth and add apple cider vinegar, red pepper flakes, salt, black pepper, and sugar. Stir well to combine.

Slow Cook

Bring the mixture to a gentle boil, then reduce the heat to low. Cover and let it simmer for about 45 minutes, stirring occasionally, until the greens are tender.

Taste and adjust seasoning if necessary. Serve hot as a side dish.
