Chill and prepare bed

Spread the crushed ice or a layer of rock salt on a large shallow platter or tray to create a stable, cold bed that will hold the oysters upright. Keep the tray in the refrigerator or on ice until ready to serve.

Clean oysters

Rinse the oyster shells under cold running water, scrubbing with a stiff brush to remove grit and debris. Discard any oysters with cracked or widely gaping shells before shucking.

Shuck oysters

Holding an oyster flat-side up in a thick towel or a glove, insert a sturdy oyster knife into the hinge. Twist the knife to pop the hinge, run the blade along the top shell to sever the muscle, and remove the top shell. Tilt the oyster to drain any excess liquid into a bowl (reserve for tasting if desired), then slide the knife under the oyster to detach the bottom muscle so the oyster sits loose in the half shell. Repeat for all oysters. Work carefully and keep oysters cold while shucking.

Arrange oysters

Place each shucked oyster on the chilled ice bed so it sits level and stable. Tuck lemon wedges and sprigs of parsley around the oysters for garnish.

Serve immediately

Serve the platter immediately with small bowls of mignonette and cocktail sauce, small forks or oyster forks, extra lemon wedges, and napkins. Oysters are best eaten right after shucking while cold and fresh.

Mignonette Sauce

Combine red wine vinegar, finely minced shallot, freshly ground black pepper, sea salt, and the optional sugar in a small bowl. Stir until the salt (and sugar, if used) dissolves. Taste and adjust: add more vinegar for acidity, more shallot for bite, or a pinch more sugar if too sharp. Chill in the refrigerator for at least 10 minutes to allow flavors to meld before serving with oysters.

Cocktail Sauce

Whisk together prepared horseradish, ketchup, fresh lemon juice, Worcestershire sauce, and hot sauce (if using) in a small bowl. Taste and adjust heat or acidity by adding more horseradish or lemon juice. Keep chilled until serving.
