Mussels Prep

Inspect mussels: discard any with broken shells or that remain open when tapped. Rinse under cold water, scrub shells and remove beards by pulling toward the hinge. Keep refrigerated until ready to cook.

Season mussels lightly with kosher salt and black pepper. Squeeze half the lemon over them and reserve the other half for serving.

Build the aromatics

In a large wide pot or deep skillet with a tight-fitting lid, heat 1 tablespoon olive oil and 1 tablespoon butter over medium heat until butter foams. Add the minced shallot and cook until translucent, about 2–3 minutes. Add the minced garlic and cook 30–45 seconds until fragrant, taking care not to brown.

Deglaze and simmer

Pour in 1 cup dry white wine to deglaze the pan, scraping any browned bits. Increase heat to medium-high and simmer until wine reduces slightly, about 3–4 minutes.

Add mussels and finish

Add the seasoned mussels to the pot, tuck in fresh thyme leaves, then cover with the lid. Steam for 4–6 minutes, shaking the pot once or twice, until mussels open. Remove opened mussels to a bowl as they finish; discard any that remain closed after 6 minutes.

Finish the broth

Reduce heat to low. Stir in remaining 3 tablespoons butter a little at a time to emulsify into the broth. If using, stir in 2 tablespoons heavy cream for extra richness. Taste and adjust seasoning with salt, pepper and a squeeze of reserved lemon juice. Sprinkle chopped parsley over mussels and ladle broth over them before serving with crusty bread.

Andouille, Garlic Tomato Broth Version

Brown the andouille and aromatics

In a large wide pot or deep skillet with a lid, heat 1 tablespoon olive oil over medium-high heat. Add the sliced andouille and brown for 2–3 minutes per side until caramelized. Remove and set aside, leaving rendered fat in the pan. Add the diced onion to the pan and cook until softened, about 4 minutes. Add the minced garlic and cook 30–45 seconds.

Build the tomato broth

Stir in 1 tablespoon tomato paste and cook 1 minute. Add 1 cup crushed tomatoes, 1 cup chicken or seafood stock, smoked paprika, dried oregano, and red pepper flakes. Return the browned andouille to the pan and add fresh thyme sprigs. Bring to a gentle simmer and cook 6–8 minutes to meld flavors. Taste and season with salt and pepper.

Steam mussels in broth

Increase heat to medium-high, add the prepared mussels to the simmering tomato-andouille broth, cover, and steam 5–7 minutes, shaking the pan occasionally, until mussels open. Remove opened mussels to a serving bowl; discard any that remain closed after 7 minutes.

Finish and serve

Stir chopped parsley into the broth, remove thyme sprigs, and squeeze reserved lemon over the mussels. Ladle the tomato-andouille broth over the mussels and serve immediately with crusty bread to soak up the broth.

To Serve

Offer lemon wedges and crusty bread alongside the mussels. Provide a bowl for discarded shells.

Suggested plating: place mussels in a shallow bowl, spoon generous broth over them, garnish with extra parsley and thyme leaves, and serve hot.
