Prepare filling

In a medium mixing bowl, beat the softened cream cheese until smooth using a spatula or electric mixer on low. Add the picked blue crab meat and fold gently to combine, keeping some lumps of crab intact for texture. Stir in the chopped green onions, cilantro, minced garlic, minced jalapeño, soy sauce, Worcestershire sauce, black pepper, and sugar (if using). Taste and adjust seasoning — you want a slightly savory, slightly spicy filling. Refrigerate the mixture 15–20 minutes to firm up slightly for easier handling.

Assemble rangoons

Set out a wonton wrapper on a clean work surface. Brush the edges lightly with beaten egg. Place about 1 tablespoon of the crab-cream cheese mixture in the center of the wrapper (use a small cookie scoop or rounded teaspoon). Fold the wrapper over to form a triangle (if using square wrappers) or bring the edges together to form a small purse; press firmly to seal, ensuring no air pockets remain. If making a classic four-cornered rangoons shape, fold two opposite corners together and press to seal, using a dab of egg to secure. Repeat with remaining filling and wrappers. Place assembled rangoons on a tray lined with parchment and cover lightly with plastic wrap so they don’t dry out.

Heat oil

Pour oil into a heavy-bottomed skillet or medium saucepan to a depth of about 1 to 1-1/2 inches (enough for shallow frying in most small pans) or use a deep fryer. Heat the oil over medium-high heat to 350°F (175°C). If you don’t have a thermometer, test by dropping a small piece of wonton wrapper into the oil — it should sizzle and turn golden within 30–45 seconds.

Fry rangoons

Working in batches to avoid overcrowding, gently lower 4–6 rangoons into the hot oil. Fry, turning occasionally, until they are golden brown and crisp all over, about 2–3 minutes per side (total 3–5 minutes depending on size and oil temperature). Use a slotted spoon to transfer cooked rangoons to a paper-towel-lined baking sheet to drain. Keep finished rangoons warm in a 200°F (95°C) oven while you fry the remaining batches.

Finish and serve

Arrange rangoons on a serving platter. Serve immediately with the jalapeño-apricot dipping sauce. Garnish with extra chopped green onions or cilantro if desired.

Jalapeño-Apricot Dipping Sauce

Combine apricot preserves, minced jalapeño, rice vinegar, soy sauce, and lime juice in a small saucepan. Warm over low heat, stirring, until the preserves loosen and the sauce is glossy and slightly thinned, about 2–3 minutes. If the sauce is too thick, add water 1 teaspoon at a time (up to the listed tablespoon) until it reaches a spoonable but dippable consistency. Taste and adjust heat or acidity as needed. Remove from heat and let cool slightly; transfer to a small bowl for serving.
