Preheat and prepare
Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
Combine dry ingredients
In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and granulated sugar until evenly distributed.
Cut in cold butter
Grate the very cold unsalted butter on the large holes of a box grater or cut into small cubes and use a pastry cutter. Work the butter into the flour mixture until pea-size pieces remain and the mixture looks coarse and sandy, about 6–8 strokes with a pastry cutter or a few seconds in a food processor.
Add cheese
Fold the freshly grated sharp cheddar into the dry mixture until evenly distributed. The butter pieces should still be visible; the cheese will help bind and add flavor.
Mix wet ingredients
In a separate bowl, whisk together the buttermilk and the large egg until combined.
Combine wet and dry
Make a well in the center of the dry ingredients and pour in the buttermilk-egg mixture. Stir gently with a wooden spoon or spatula until the dough just comes together. Do not overmix; a slightly shaggy, sticky dough is correct. If dough feels very dry, add 1–2 tablespoons extra buttermilk.
Turn out and fold
Turn the dough out onto a lightly floured surface. With floured hands, gently fold the dough over itself 3–4 times to bring it together and create layers. Pat the dough into a 1-inch thick rectangle or circle, about 8x6 inches.
Cut biscuits
Using a 2.5-inch round biscuit cutter (or a floured drinking glass), press straight down without twisting to cut rounds. Re-roll scraps gently once and cut additional biscuits until dough is used. You should get about 8–10 biscuits.
Arrange and bake
Place biscuits on the prepared baking sheet about 1 inch apart for slightly crisper edges or touching for taller, softer sides. Optional: brush tops with a little buttermilk for extra browning. Bake in the preheated oven for 12–15 minutes, until golden brown and cooked through.

While the biscuits bake, combine the softened unsalted butter, honey, and salt in a small bowl. Using a fork or hand mixer, beat until smooth and fluffy, about 1–2 minutes. Taste and adjust honey or salt to preference.
