Preparation Steps
Prepare the Pan
Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan. Sprinkle brown sugar evenly over the bottom of the pan and arrange pineapple slices on top, placing a cherry in the center of each slice.
Mix Dry Ingredients
In a bowl, whisk together flour, baking powder, and salt; set aside.
Cream Butter and Sugars
In another bowl, cream together the butter, granulated sugar, and brown sugar mixture until light and fluffy.
Add Eggs and Vanilla
Beat in the eggs one at a time, then stir in the vanilla extract.
Combine Mixtures
Gradually add the dry ingredient mixture to the wet mixture, alternating with milk, starting and ending with the dry ingredients. Mix until just combined.
Pour Batter
Pour the batter over the pineapple slices in the prepared pan, spreading it evenly.
Bake
Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
Cool and Serve
Allow the cake to cool for 10 minutes, then invert onto a serving plate. Serve warm or at room temperature.
