Cheesecake Filling
Make filling
In a medium bowl, beat the softened cream cheese with a whisk or hand mixer until smooth and creamy. Add the granulated sugar, vanilla extract, and lemon zest (if using); continue to beat until fully incorporated and smooth.
Fold in the finely chopped fresh strawberries gently, keeping some texture. Taste and adjust sugar if strawberries are very tart. Transfer the filling to a small bowl or piping bag; cover and chill for at least 15 minutes to firm slightly (this helps with stuffing).
French Toast Assembly
Prepare bread
Lay 4 slices of bread on a work surface. Spread about 2 to 3 tablespoons of the chilled cheesecake-strawberry filling evenly over each slice, leaving a 1/4-inch border to prevent overflow.
Top each filled slice with the remaining 4 slices of bread to make 4 sandwiches. Press gently around the edges to seal. If desired, use a small amount of softened butter around edges to help seal.
Lightly flatten each sandwich with your palm so it holds together but don’t compress too much or the filling will escape during cooking.

In a shallow wide bowl or pie plate, whisk together the eggs, whole milk, heavy cream, vanilla extract, ground cinnamon, and a pinch of salt until homogenous and slightly frothy.

Preheat pan and dip
Preheat a large nonstick or cast-iron skillet over medium-low to medium heat. Add 1 tablespoon of butter to the pan and let it melt and coat the surface. Working with one sandwich at a time, dip both top and bottom of each filled sandwich into the egg batter: hold the sandwich submerged for about 5–7 seconds per side so the bread soaks but does not fall apart. Let excess drip back into the bowl.
Place the dipped sandwich in the preheated skillet. Cook for 3–4 minutes per side, adjusting heat as needed so the exterior becomes golden-brown and the interior filling warms through but does not leak excessively. Add the remaining 1 tablespoon butter to the pan before cooking the next two sandwiches if needed. If filling starts to leak, wipe pan and reduce heat slightly.
Warm the maple syrup and strawberries
While the last sandwich cooks, pour the maple syrup into a small saucepan and warm over low heat until just heated (do not boil). Stir the sliced strawberries into the warmed syrup and remove from heat to let flavors meld for a minute.
Transfer cooked stuffed French toast to a wire rack set over a tray or plate to keep bottom from steaming soggy. Repeat until all sandwiches are cooked.
To serve, place each stuffed French toast on plates, spoon warm strawberry-maple syrup over the top, garnish with additional sliced strawberries and a light dusting of powdered sugar if desired.
Serve immediately while warm so the cheesecake filling is creamy and the bread is crisp on the outside.
