Cook the bacon
Place a large skillet over medium heat. Lay 3 slices of thick-cut bacon in the cold skillet and turn heat to medium-low. Cook 6–8 minutes, turning occasionally, until bacon is golden and slightly crisp but still flexible. Transfer bacon to a paper-towel-lined plate to drain. Reserve 1 tbs of bacon fat in the skillet (discard excess or save for another use).
Toast the bread and prepare tomato
While bacon cooks, slice the tomato into 1/4-inch rounds and season lightly with a pinch of salt. Toast 2 slices of bread to desired doneness (use a toaster or place in a dry skillet over medium heat 1–2 minutes per side). Set toasted bread aside.
Scramble the eggs
Crack 3 eggs into a bowl, add 2 tbs whole milk, 1/2 tsp freshly ground black pepper, and 1/2 tsp kosher salt (adjust to taste). Whisk until combined and slightly frothy. Heat a clean nonstick skillet over medium-low and add 1 tbs unsalted butter. When butter is foaming but not browned, pour in egg mixture. Let eggs sit undisturbed 10–15 seconds, then using a spatula, gently stir from the edges to center, forming soft curds. Cook 1–2 minutes until eggs are creamy but set. Remove from heat and immediately fold in shredded cheddar (1 oz) so it melts into the eggs.

If you reserved bacon fat and prefer a crisper bacon or extra flavor, you can briefly reheat bacon in the skillet for 30 seconds per side before assembling. Use remaining olive oil (1 tsp) for any toast or pan heating needs. Season final plate to taste with additional salt and pepper and finish with 1 tsp hot sauce if using.
