Prep
Make batter
Combine dry ingredients
In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until evenly distributed.
Combine wet ingredients
In a separate bowl or large measuring cup, whisk the milk, egg, melted butter, and vanilla extract until combined and smooth.
Make a well in the center of the dry ingredients and pour in the wet mixture. Gently fold with a spatula or wooden spoon until mostly combined. Do not overmix; a few small lumps are fine. Let the batter rest for 5 minutes — this hydrates the flour and gives fluffier pancakes.
Cook pancakes
Prepare skillet
Lightly grease the preheated skillet with about 1 teaspoon of the unsalted butter or a thin film of oil. Wipe with a paper towel so the surface is evenly coated but not greasy.
Portion batter
For three large pancakes, use about 1/2 cup (120 ml) of batter per pancake. Pour the batter onto the hot skillet, spacing the pancakes so they have room to spread.
First side
Cook over medium heat until small bubbles form across the surface and the edges look set, 2–3 minutes. Check one pancake: the bottom should be golden brown.
Flip and finish
Flip each pancake with a spatula and cook the other side until golden and cooked through, about 1–2 minutes more. Adjust the heat as needed so the pancakes brown evenly without burning. Repeat until you have three large pancakes (keep finished pancakes warm on a plate in a low oven, about 90°C/200°F, if desired).
Serve
Stack the three large golden pancakes on a plate. Add a pat of butter on top if desired and drizzle with maple syrup (serve the 3/4 cup of maple syrup on the side or pour over pancakes). Serve immediately while warm.
Optional: garnish with fresh berries or a dusting of powdered sugar if desired (not included in ingredient list).
