Prepare rim

If rimming the glass, pour the salt and pepper onto a small plate and rub the lemon wedge around the outer rim of a highball or pint glass, then dip the rim into the salt/pepper mixture so it adheres. Set glass aside.

Build and mix

Fill a cocktail shaker or mixing glass with ice. Add vodka, tomato juice, fresh lemon juice, Worcestershire sauce, hot sauce, prepared horseradish, celery salt, freshly ground black pepper and a pinch of smoked paprika. Stir gently but thoroughly for about 20–30 seconds (stirring keeps the tomato juice silky). Taste and adjust seasoning — add more hot sauce for heat, more Worcestershire for umami, or a squeeze more lemon for brightness.

Serve

Fill the prepared serving glass with fresh ice. Strain the mixture from the shaker into the glass (or pour directly if built in glass). Garnish with a celery stalk and lemon wedge. Skewer the olive (and optional pickle spear, cherry tomato, or cooked bacon strip) on the cocktail pick and rest across the glass. Give the drink a final grind of black pepper and a tiny sprinkle of smoked paprika on top if desired.

For a fuller-flavored Bloody Mary, prepare ingredients ahead (chill tomato juice and vodka). For a spicier or more savory version, increase horseradish to 1 tsp and add additional dashes of hot sauce or a pinch of cayenne. Serve immediately.
