Examine the bottle for sediment and storage condition. If the bottle has been stored horizontally and has visible sediment (common in older red blends), stand the bottle upright for 1–2 hours before opening to let sediment settle to the bottom. Use a waiter’s corkscrew to cut the capsule cleanly and remove the cork.

Inspect and open

If the wine is young (under 5 years) or you want to open up aromas, decant for 30–60 minutes. Pour slowly into a decanter in one steady stream, stopping once you see any sediment reach the neck. If the wine is older and has heavy sediment, pour with care and consider using a light source (candle or small lamp) behind the bottle neck to spot sediment and stop pouring before it reaches the decanter.

Decanting (optional)

Turley Patron Saint is best served slightly below room temperature: about 60–65°F (15–18°C). If your storage temperature is warmer, place the opened bottle in the refrigerator for 10–15 minutes before serving; if it is cooler, let it sit 10–15 minutes at room temperature after removing from the fridge.

Chill or rest

Select clean Bordeaux-style or large-bowled red wine glasses. Swirl each glass to check for cleanliness and pour a small tasting amount (about 2–3 oz / 60–90 ml) for the host to evaluate before filling glasses for guests.

Prepare glassware

Pour about 5–6 oz (150–180 ml) per serving into each glass, filling to the widest part of the bowl to allow aeration. Hold the bottle at the base and pour steadily, twisting the wrist at the end of the pour to prevent drips.

Pouring

Arrange the cheeses, cured meats, and sliced bread on a board. Bring cheeses to room temperature 20–30 minutes prior to serving for best flavor. Place small plates or napkins for guests and a bowl of filtered water to cleanse the palate between tastings. Offer small squares of dark chocolate to complement the wine’s dark fruit and spice notes.

Pairing presentation

Encourage guests to observe color (deep ruby to garnet), swirl to release aromas (dark berries, plum, mocha, baking spice), sniff for complexity, and take a small sip to note flavors and acidity/tannin structure. If you decanted, taste at intervals (immediately, 30 min, 60 min) to observe how the wine opens.

Tasting notes & suggestions

Recork the bottle with the original cork (insert cork-side-first to minimize abrasion) or use a vacuum wine preserver. Store upright in a cool, dark place or refrigerate and consume within 3–5 days for best quality. Allow refrigerated wine to warm slightly (10–20 minutes) before re-tasting.
