Prepare the Tortilla Chips

Cut the corn tortillas into triangles. Heat the vegetable oil in a deep frying pan over medium heat.

Fry the Tortilla Chips

Once the oil is hot, carefully add the tortilla triangles in batches. Fry until golden and crispy, about 2-3 minutes per batch. Remove and drain on paper towels. Season with salt to taste.

Make the Roux

In a saucepan over medium heat, melt the butter. Whisk in the flour and cook for about 1-2 minutes until it turns a light golden color.

Add Milk and Cheese

Gradually whisk in the milk until smooth. Continue to cook, stirring constantly, until the mixture thickens. Reduce heat and add the sharp cheddar cheese, diced jalapeño peppers, cayenne pepper, and salt. Stir until the cheese is melted and the sauce is smooth.

Combine the Ingredients

On a large serving platter, layer the fried tortilla chips. Top with crawfish tails, sliced andouille sausage, and diced tasso ham.

Drizzle the spicy cheese sauce generously over the top.
