Crack the eggs into a medium bowl. Add the milk or cream, salt, and black pepper.
Whisk vigorously until uniformly combined and slightly frothy, about 20–30 seconds. This incorporates air for a tender omelet.
Prepare fillings
If using raw additions (mushrooms, bacon, ham, spinach): cook them ahead so they are fully cooked and moisture is reduced. Sauté mushrooms in a little oil until browned and any liquid has evaporated. Cook bacon until crisp and chop; or sauté diced ham briefly to warm. Wilt spinach quickly in a pan and squeeze out excess moisture.
Grate the cheese and chop any herbs or tomatoes. Keep fillings ready and warm or at room temperature so the omelet cooks quickly.
Cook omelet
When the surface is mostly set but still moist, reduce heat to low. Sprinkle the chosen fillings (cheese first so it melts, then meats/vegetables and herbs) over one half of the omelet in an even layer. Use the amount listed in the ingredients or adjust to taste.
Let the omelet sit for another 15–30 seconds so the cheese melts and fillings warm through.
Using the spatula, gently fold the omelet in half over the fillings. Tilt the pan and slide the omelet onto a warmed plate, seam side down. If preferred, you can fold into thirds for a classic French-style omelet.
