Chill glass

Place a chilled Champagne flute or coupe in the freezer for a few minutes or fill it with ice and water while preparing the drink to cool it.

Combine base ingredients

Fill a cocktail shaker about two-thirds full with ice. Add 1.5 oz Hendrick's gin, 0.5 oz freshly squeezed lemon juice, and 0.5 oz simple syrup to the shaker.

Shake

Cap the shaker and shake vigorously for about 10–15 seconds until the outside of the shaker is very cold. This chills and slightly dilutes the mixture for balance.

Strain

Discard the ice (or water) from your chilled flute/coupe if you used it to chill. Double-strain the shaken mixture into the chilled flute/coupe using a Hawthorne and a fine mesh strainer to remove ice shards and any lemon pulp.

Top with sparkling wine

Carefully top the cocktail with approximately 3 oz of chilled Chandon Brut (or other dry sparkling wine). Pour slowly down the side of the glass to preserve bubbles and avoid excessive foam.

Garnish

Express the oils of a fresh lemon peel over the surface of the drink by holding the twist skin-side down about an inch above the glass and giving it a quick bend. Rub the peel around the rim if desired, then drop it into the drink or rest on the rim.

Serve

Serve immediately while the sparkling wine is lively. Enjoy responsibly.
