Roast the beets
Preheat oven to 400°F (200°C). Trim beet greens and scrub beets clean. Wrap each beet loosely in aluminum foil and place on a baking sheet. Roast for 45–60 minutes until a paring knife slips in easily. Remove from oven, unwrap, let cool 10 minutes, then rub off skins with a paper towel. Slice roasted beets into 1/4-inch rounds or half-moons and set aside.
Prepare raw red vegetables
While beets roast, thinly slice the red onion into half-moons. Remove seeds and membranes from the red bell pepper and cut into thin strips or small dice. Core the tomatoes and cut into wedges or 1/2-inch dice. Keep these components separate so they can be arranged across the salad like textile pieces.
Binding & Dressing
Make the dressing: in a small bowl or jar combine the extra-virgin olive oil, red wine vinegar, Dijon mustard, honey, sea salt, and black pepper. Whisk or shake vigorously until fully emulsified and slightly thickened. Taste and adjust seasoning — add more vinegar for brightness or honey for sweetness if needed.
Dress the vegetables: place the sliced roasted beets, red onion, bell pepper, and tomato in a large shallow serving platter or individual plates arranged intentionally like a patchwork (alternating colors and shapes). Drizzle about two-thirds of the dressing evenly over the vegetables, reserving the remainder for finishing. Gently toss or use tongs to ensure each piece has a light coating without bruising the beets.
Textural & Flavor Accents
Scatter the crumbled feta (or goat cheese) over the dressed vegetables in an even layer, mimicking stitching along the fabric. Sprinkle the toasted chopped walnuts for crunch and the torn basil leaves for herbaceous pops of green.
Finish and serve: add the microgreens or baby arugula on top if using. Drizzle the reserved dressing sparingly over the finished composition for shine and flavor. Taste and season with additional salt and pepper to preference.
