Hard-boil eggs

Place 12 large eggs in a single layer in a large pot and cover with cold water by about 1 inch. Bring to a rolling boil over high heat. As soon as the water boils, cover the pot, remove from heat, and let sit for 11 minutes for fully set yolks. Meanwhile prepare an ice bath (bowl with ice and cold water).

Cool & peel

After 11 minutes, transfer eggs to the ice bath and chill for at least 10 minutes. Once cooled, gently crack shells and peel under running water to remove membranes and get smooth whites. Pat dry with paper towels.

Prepare yolk mixture

Slice each egg lengthwise and carefully remove yolks into a medium bowl. Place whites on a serving platter or tray. Mash yolks with a fork until fine crumbs remain. Add 1 cup mayonnaise, 2 tbs Dijon mustard, 1 tsp yellow mustard, 1 tsp apple cider vinegar, 1 tsp granulated sugar, 1 tsp salt, 1 tsp black pepper, and 1 tsp smoked paprika. Mix until completely smooth and creamy. Taste and adjust seasoning (more salt, vinegar, or mustard as needed).

Prepare and crisp meats

Trim casings from 4 oz andouille sausage and slice into 1/4-inch pieces. Chop 2 oz tasso ham into small dice. Heat 1 tablespoon neutral oil in a medium skillet over medium-high heat. Add andouille slices and cook, stirring, until edges are browned and slightly crisp, about 4–5 minutes. Add tasso and cook another 1–2 minutes just to render some fat and crisp edges. Transfer cooked meats to a paper towel-lined plate to drain. Reserve 1–2 teaspoons of rendered fat in skillet (optional) for stirring into the yolk mixture for extra smoky flavor.

Incorporate meats

Once meats are cool enough to handle, chop most of the cooked andouille and tasso into fine bits (reserve a small portion of larger crisp pieces for garnish). Fold about 3/4 of the chopped meat into the yolk mixture, keeping the rest for topping. If you reserved rendered fat, add 1–2 tsp to the yolk mixture at this point for deeper flavor and mix well.

Pipe or spoon filling

Transfer the yolk-and-meat mixture to a piping bag fitted with a large star tip or use a zip-top bag with the corner snipped. Pipe a generous swirl of filling into each egg white half. Alternatively, use two spoons to spoon the mixture into each well, smoothing the top slightly.

Garnish and finish

Sprinkle reserved larger crisp andouille/tasso pieces across the filled eggs. Dust lightly with the remaining smoked paprika (about 1/2 tsp) and scatter sliced chives and microgreens or parsley as desired. Taste one egg and add an extra pinch of salt, pepper, or a tiny drop of vinegar if needed.

Serving & storage notes

Serve immediately at room temperature or chilled. For best texture, assemble within 1–2 hours of serving. Refrigerate leftovers in an airtight container for up to 2 days (creamy filling can weep over time).
