Cocktail
Prepare glass
Fill a highball glass with ice cubes until about 1/2 inch from the rim (roughly 1 cup of ice). Using plenty of ice helps keep the ginger beer lively and the drink properly chilled.
Add lime juice
Pour 1/2 oz fresh lime juice over the ice. Freshly squeezed juice brightens the cocktail and balances the sweetness of the ginger beer.
Top with ginger beer
Add 4 oz cold ginger beer to the glass. Pour gently to preserve carbonation; leave room on top so the rum can float.
Float the rum
Slowly pour 2 oz dark rum over the back of a spoon or down the side of the glass so it floats on top of the ginger beer, creating the characteristic layered 'stormy' look.
Garnish and serve
Garnish with a lime wedge on the rim. Serve with a long stirring straw or bar spoon so the drinker can stir the rum into the ginger beer to taste.
