Prep proteins
Trim visible fat from chicken thighs and pat dry. Season chicken lightly with 1/2 tsp salt and 1/4 tsp black pepper. Slice sausage into 1/4-inch rounds.
In a large Dutch oven or heavy-bottomed pot, heat 1 tablespoon of the oil over medium-high heat. Add sausage slices and brown for 4–6 minutes, stirring occasionally, until edges are caramelized. Remove sausage with a slotted spoon and set aside.
Roux & Fats
Make the roux
Reduce heat to medium-low. If the pot has little fat, add remaining oil to total 1 cup. Sprinkle in the flour and stir constantly with a flat-edged wooden spoon or spatula. Cook the roux slowly—it will take 20–30 minutes for a dark, chocolate-brown roux. Keep stirring and scraping the bottom to prevent burning. The roux should smell nutty and look like dark chocolate.
If the roux is getting too dark too quickly, lower the heat. A lighter roux (peanut-butter color) shortens cook time and gives a thicker, less toasted flavor; a darker roux adds deeper, smoky notes typical of Creole gumbo.

Add vegetables
Once the roux is at your desired color, immediately add the diced onion, bell pepper and celery. The roux will bubble and thicken—stir constantly so the vegetables are evenly coated. Cook 6–8 minutes over medium heat until softened. Add the minced garlic and cook 30–60 seconds until fragrant.

Build the gumbo
Stir in the tomato paste and cook 1–2 minutes to remove raw flavor. Add dried thyme, oregano, Creole seasoning, cayenne (if using), black pepper, remaining 1 tsp salt, bay leaves, and the optional diced tomatoes with their juices. Cook and stir 1–2 minutes to combine.
Slowly whisk in the chicken stock to the pot to incorporate the roux-vegetable mixture. Start by adding a ladleful while whisking to smooth lumps, then add the rest. If the gumbo seems too thick, add up to 1 cup hot water to reach desired consistency.
Return the browned sausage and chicken to the pot. Bring to a gentle simmer, then reduce heat to low. Cover and simmer gently for 30–40 minutes so flavors meld and chicken is cooked through. Skim any excess fat from the surface as needed.
Finishing & Serve
Finish gumbo
Taste and adjust seasoning with additional salt, Creole seasoning, or hot sauce as desired. Remove and discard bay leaves. Stir in chopped parsley and most of the sliced green onions, reserving some for garnish. If using file powder, sprinkle it in 1/2 teaspoon at a time off heat and stir — do not boil after adding file or it will become stringy.
To serve: Spoon 3/4 to 1 cup steamed rice into shallow bowls and ladle 1 to 1-1/2 cups gumbo over the rice. Garnish with remaining green onions and an extra sprinkle of parsley. Serve with lemon wedges and additional hot sauce on the side.
