Prepare

Chill a coupe or Nick & Nora glass in the freezer or fill it with ice water while you build the cocktail.

Dry shake (if using egg white)

In a cocktail shaker, combine gin (2 oz), fresh lemon juice (0.75 oz), creme de violette (0.5 oz), orange liqueur (0.25 oz), simple syrup (0.25 oz), and egg white (0.5 oz). Do not add ice. Seal the shaker and shake vigorously for 12–20 seconds to emulsify and create a silky foam.

Wet shake

Open the shaker, add 4 pieces of ice, reseal and shake again vigorously for 10–15 seconds to chill and dilute the drink to the proper temperature and texture.

Strain

Discard the ice (if using ice water) from the chilled glass. Double-strain the cocktail into the chilled coupe using a Hawthorne strainer and a fine mesh strainer to remove ice shards and any coagulated egg white bits, yielding a smooth, frothy surface with a delicate pale blue-lavender color.

Garnish & serve

Express a lemon twist over the drink to release oils, rub it on the rim and drop it in, or add a maraschino cherry on a pick. Serve immediately.
