Gently warm and season crab
In a medium skillet over medium-low heat, melt 2 tbs unsalted butter. Add the minced shallot and sauté 1–2 minutes until translucent but not browned. Add the minced garlic and cook 30 seconds until fragrant. Pour in 3 tbs dry white wine and simmer 1 minute to reduce slightly. Add 1 cup lump blue crab meat and use a spatula to gently fold and warm the crab for 1–2 minutes — avoid over-stirring so lumps stay intact. Stir in 1 tbs fresh lemon juice, 1 tbs chopped parsley, 1 tsp salt, 1/2 tsp black pepper and 1/2 tsp hot sauce if using. Remove from heat and set aside, keeping warm.
Cheese Fondue Base
Prepare cheese
Grate 1 cup gruyère and 1/2 cup fontina and toss with 1 tsp cornstarch to help stabilize the melt. This prevents separation and gives a silky texture.
Heat base
In a medium saucepan over low heat, combine 1 cup half-and-half (or heavy cream) and 4 oz softened cream cheese. Whisk continuously until cream cheese is fully incorporated and mixture is smooth and warm but not simmering, about 3–4 minutes.
Melt cheeses
Gradually add the grated cheeses to the warm cream mixture, a small handful at a time, whisking constantly and allowing each addition to melt before adding more. Keep the heat low to prevent graininess. Once all cheese is incorporated and the mixture is smooth, whisk in 1 tsp Dijon mustard, 1/2 tsp Worcestershire sauce and 1/8 tsp ground nutmeg. Taste and adjust seasoning with additional salt or pepper if needed.
Combine crab with fondue
Fold the warmed, seasoned crab gently into the cheese fondue until evenly distributed. Keep the fondue warm over the lowest heat or transfer to a small fondue pot or heat-proof serving dish set over a tea light or low warming element so it stays saucy and dip-able.
Toasts & Garnish
Prepare and toast baguette
Preheat oven to 400°F (200°C). Slice the baguette on a diagonal into 1/2-inch slices. Brush both sides lightly with a mixture of 2 tbs olive oil and 1 tbs melted butter. Arrange slices on a baking sheet in a single layer and bake 6–8 minutes, flipping once halfway, until edges are golden and crisp. Alternatively, toast in a skillet over medium heat until golden.
Finish and serve
Transfer the warm crab fondue to a serving dish or fondue pot. Sprinkle 1 tbs thinly sliced chives over the top for color. Serve immediately with toasted baguette slices and lemon wedges on the side for squeezing. Provide small forks or spreaders so guests can dip or spoon fondue onto toasts.
