Prepare glass
Chill a wine glass or large stemmed glass by filling with ice and cold water while you build the cocktail, or place it briefly in the freezer.
Combine base ingredients
In a cocktail shaker, add gin, fresh lemon juice, blackberry syrup (or muddled blackberries combined with 1/2 oz simple syrup), amaro, crème de cassis (if using), and 2 dashes of Angostura bitters.
Add ice and shake
Add a generous handful of ice (about 1 cup) to the shaker and shake vigorously for 10–12 seconds to chill and dilute slightly.
Prepare glass for wine
Discard ice/water from the chilled wine glass. Optionally add a few fresh ice cubes if you prefer your Black Pine on the rocks; traditionally this is served with straight wine temperature (chilled), so no ice is also acceptable.
Serve
Serve immediately while the Pinot Noir is chilled and aromatics are fresh. Estimated single serving.
