Wine Flight - Anne Amie Pinot Gris
Simple Pairing Plate (serves 4)
Method
Wine Flight - Anne Amie Pinot Gris
Chill the bottle of Anne Amie Pinot Gris to serving temperature (45–50°F / 7–10°C). If bottle is at room temperature, place in an ice bath (equal parts ice and water) for 20–30 minutes, or put in refrigerator for 2–3 hours.
If you want a gentle palate cleanser option, chill sparkling water and serve a small flute of it alongside the wine between sips.
Open the bottle just before serving. Wipe the lip and pour a 2–3 ounce (60–90 ml) tasting pour into glasses for each guest to evaluate color, aroma, and first impression before moving to full pours (5–6 ounces / 150–180 ml).
Serve Pinot Gris in tulip-shaped white wine glasses to concentrate aromatics. Encourage guests to smell, then taste — Anne Amie Pinot Gris typically shows pear, stone fruit, jasmine, and a hint of minerality.
Simple Pairing Plate (serves 4)
Toast the bread
Preheat oven to 350°F (175°C). Lightly brush baguette slices with the olive oil and arrange on a baking sheet. Toast in the oven 6–8 minutes until golden and crisp. Remove and let cool slightly.
Prepare the pears and cheese
Core and thinly slice the pears into rounds or thin wedges. Place the goat cheese in a small bowl and stir briefly to ensure a spreadable texture. If desired, squeeze the half lemon over the pear slices to prevent browning and add brightness (use sparingly).
Finish and season
Sprinkle the assembled bites with a pinch of flaky sea salt and a tiny grind of black pepper to enhance flavors and complement the wine's acidity and fruit. Arrange on a platter.
Serve
Bring the chilled Anne Amie Pinot Gris and the pairing plate to the table. Pour 5–6 ounces (150–180 ml) of wine per guest alongside the pairing bites. Encourage tasting combinations: pear+chevre+honey, pear+walnut, or chevre+walnut. Use sparkling water between sips if desired to refresh the palate.
