Build and chill

Place a rocks or highball glass in the freezer for a few minutes or fill with ice to chill while you prepare the cocktail.

Mix base

In a cocktail shaker (or mixing glass) add the bourbon, fresh lemon juice, maple syrup, and Angostura bitters. Add 2–3 ice cubes to the shaker.

Shake

Shake vigorously for about 8–10 seconds until well-chilled and slightly diluted.

Prepare glass

Discard ice from the chilled glass if you used it to chill. Add 2–3 fresh ice cubes to the glass.

Strain and top

Strain the shaken bourbon mixture into the prepared glass over fresh ice. Gently top with 6 oz (well chilled) dry hard cider poured slowly down a spoon or the inside of the glass to preserve carbonation and create a layered look.

Finish and garnish

Give the drink a gentle stir once or twice to marry flavors without losing too much fizz. Garnish with a lemon wheel on the rim and optionally a piece of candied ginger or a thin apple slice on a pick.

Serve

Serve immediately while the cider is bubbly and cold.
