Muddle blackberries

Place 3 fresh blackberries in a mixing glass or shaker and muddle gently until broken down but not completely pulverized (about 10–15 seconds).

Add the bourbon, blackberry liqueur, lemon juice, and demerara or simple syrup to the muddled berries.

Add the Cabernet Sauvignon and bitters to the mixing glass.

Add large ice cubes (or a generous amount of ice) and stir gently for 20–25 seconds to chill and slightly dilute the mixture. If you prefer a slightly more aerated result, shake briefly for 8–10 seconds and then strain over fresh ice.

Garnish & Finish

Strain the cocktail into a rocks glass over 1–2 large ice cubes (or into a wine glass if you prefer). Use a fine strainer if you muddled heavily to catch seeds and pulp.

Express the oils of an orange peel over the top of the drink by holding the peel skin-side down about 3–4 inches above the glass and giving it a sharp bend. Run the peel around the rim and drop it into the drink.

Garnish with the remaining fresh blackberry (skewered if desired). Serve immediately.
