Prepare pineapple

Trim top and bottom off the pineapple. Stand upright and slice off the skin in vertical strips, removing any remaining eyes with a paring knife. Cut the pineapple into four quarters lengthwise and remove the core from each quarter. Slice the quarters crosswise into 1/2-inch thick rounds or bite-sized chunks, depending on preference.

Marinate pineapple

Place the pineapple pieces in a large bowl. Add the lime juice, 2 tsp honey, and a pinch of sea salt. Toss gently to coat. Let sit at room temperature for 10–15 minutes to allow the flavors to meld.

Heat a nonstick skillet or grill pan over medium-high heat. Add pineapple pieces in a single layer (work in batches). Cook 1–2 minutes per side until caramelized golden spots appear, turning once. Remove to a plate and let cool slightly.

Citrus Cream

Make the cream base

Chill a medium mixing bowl and beaters for best whipping results. Pour 1 cup heavy cream into the chilled bowl and whip on medium speed until soft peaks form (about 2–3 minutes).

Combine yogurt and flavorings

In a separate bowl, stir together 1 cup Greek yogurt, 2 tablespoons powdered sugar, orange zest, lemon zest, 2 tablespoons orange juice, 1 teaspoon vanilla extract and a pinch of salt until smooth.

Fold together

Carefully fold the whipped cream into the yogurt mixture in two additions, using a spatula to keep the mixture airy and smooth. Taste and adjust sweetness with a little more powdered sugar or honey if desired. Chill the citrus cream in the refrigerator while finishing pineapple.

Finishing & Garnish

Toast coconut

In a small dry skillet over medium heat, toast the coconut flakes, stirring constantly, until lightly golden and fragrant, about 2–3 minutes. Transfer to a plate to cool.

Assemble

Divide the pineapple pieces among 4 serving bowls or plates (serves 4). Spoon a generous dollop (about 3–4 tablespoons) of chilled citrus cream over each portion of pineapple.

Drizzle and garnish

Drizzle about 1/2 tablespoon runny honey over each serving. Sprinkle the toasted coconut flakes evenly and top with 2 mint leaves per serving. Serve with a lime wedge on the side for an extra citrus squeeze if desired.
