Confirm booking
Confirm the guided bike & lunch experience reservation at least 24 hours in advance with the operator and Pat'e Palo for the lunch reservation. Provide dietary restrictions and number of participants.
Assemble gear
Gather bicycles, helmets, water bottles, small daypack or saddle bag, sunscreen, light jacket, phone/camera, and payment method. Ensure bicycles are pumped, brakes are checked, and seats are properly adjusted to each rider’s height.
Meet your personal guide at the agreed meeting point (Plaza España or tour office) 10 minutes before the scheduled departure time to allow for introductions and a brief safety talk.
Perform a quick bike safety check with the guide: test brakes, lights (if needed), tires, and adjust mirrors or bells. Put on helmets and secure any loose items in the daypack or saddle bag.

Route overview
Start the guided ride through the main arteries of the Colonial Zone, following a curated route of approximately 6–8 km with cobblestone streets and a mix of short uphill and flat sections. The guide will set a comfortable pace with frequent stops for commentary.
Key stops
Plan to stop at 5–7 highlights: Alcázar de Colón, Catedral Primada de América, Parque Colón, Calle El Conde, Fortaleza Ozama viewpoint, and hidden plazas. At each stop, dismount and allow the guide to provide historical context, architecture notes, and photo opportunities.
Walking stretches
For cobblestone, narrow streets, or inside certain historic sites, dismount and walk the bike for short segments to preserve the site and ensure safety. Expect about two short walking segments (5–10 minutes each).
Hydration & pacing
Take small water breaks every 20–30 minutes, particularly if the weather is warm. The guide will monitor the group’s energy and adjust the pace. Keep sunscreen re-applied if needed during the ride.
Timing to lunch
Time the ride to arrive at Pat'e Palo about 10–15 minutes before your reserved table time so you can freshen up if needed and be seated promptly. Total guided ride time (not including lunch) is about 60–75 minutes.

Arrival & seating
Lock or secure bicycles at a safe location near the restaurant entrance (ask host/guide for recommended spot). Enter Pat'e Palo and check in with the reservation. The guide may join for lunch or leave you at the restaurant depending on the booking.
Ordering
Order a starter to share such as a local antipasto or seasonal appetizer. Choose mains that reflect the restaurant’s specialties — grilled local fish, seafood pasta, or regional dishes. Include side salads or seasonal vegetables to balance the meal.
Dietary adjustments
If you provided dietary restrictions, reconfirm with the server. Pat'e Palo can typically accommodate seafood, vegetarian, and gluten-aware requests with advance notice.
Enjoyment & local flavors
Savor the flavors, ask the server about local ingredients, and consider pairing with a house cocktail or Dominican rum-based suggestion. Share dessert to finish — a light sorbet or tres leches — and finish beverages.
Payment & gratuity
Settle the bill with cash or card. Standard gratuity practices apply; a 10–15% tip for service is customary if not included. Tip the guide separately if they accompanied you and provided excellent service.
