Prep

Have lobster and crab meat chopped or flaked, potato peeled and diced, and aromatics finely diced. Measure out cream, stock, and herbs.

In a small saucepan over medium heat, melt 1 tbs unsalted butter. Add the diced onion, celery and carrot and sweat for 3–4 minutes until softened but not browned.

Stir in 1 tbs flour and cook 1 minute to remove raw flour taste, stirring constantly.

Add the diced potato and 1 cup stock, scraping up any browned bits; bring to a gentle simmer. Simmer 6–8 minutes until the potato is tender but not falling apart.

If using wine, stir in 2 tsp dry white wine and reduce for 1 minute. Lower heat and stir in 1/2 cup half-and-half. Warm gently—do not boil—until the chowder is glossy and slightly thickened, about 2 minutes.

Add the lobster and crab meat to the pot and gently heat through for 1–2 minutes to avoid overcooking. Season with 1/2 tsp kosher salt, 1/4 tsp black pepper, 1 tsp chopped parsley and 1 tsp chopped chives. Taste and adjust seasoning.

Ladle chowder into warmed bowls, finish with a small squeeze of lemon to brighten, and serve immediately.

Main — Seared Beef Tenderloin with Red Wine Jus, Truffle Mashed Potatoes & Seasonal Vegetables

Potatoes

Place 1 cup quartered Yukon gold potatoes in a small pot, cover with cold salted water and bring to a boil. Simmer 12–15 minutes until fork-tender. Drain well and return to pot. Add 2 tbs milk and 1 tbs unsalted butter; mash to a smooth but slightly rustic texture. Stir in 1/2 tsp white truffle oil (or 1/2 tsp truffle butter) and season lightly with salt and pepper. Keep warm.

Vegetables

Blanch 0.75 cups seasonal vegetables in boiling salted water 2–3 minutes until crisp-tender (timing depends on vegetable). Immediately plunge into ice water to stop cooking, then drain and pat dry. In a small skillet, heat 1/2 tbs olive oil over medium heat, add vegetables and sauté 1–2 minutes, finish with 1/2 tsp lemon juice and a pinch of salt and pepper. Keep warm.

Steak — Sear & Roast

Pat the beef tenderloin steak dry and season both sides with 3/4 tsp kosher salt and 1/2 tsp freshly ground black pepper. Heat a heavy skillet (cast iron preferred) over high heat until very hot. Add 1 tbs olive oil and when shimmering, add the steak. Sear 2–3 minutes without moving until a deep brown crust forms.

Flip the steak, add 1 tbs unsalted butter, 1 smashed garlic clove and 1 tbs fresh thyme to the pan. Tilt the pan and baste the steak with melted butter and pan juices for 1–2 minutes. For medium-rare, transfer skillet to a 400°F (200°C) oven for 4–6 minutes (timing varies by thickness). Use an instant-read thermometer: 125–130°F for medium-rare. Remove steak to a resting tray and tent loosely with foil for 5–7 minutes.

Red Wine Jus

While steaks rest, pour off excess fat from the skillet leaving browned bits. Place skillet over medium heat, add 1/2 cup dry red wine and deglaze, scraping up fond. Reduce by about half (2–3 minutes), then add 1/2 cup beef stock. Simmer to reduce and concentrate for 4–6 minutes until slightly thickened. Off heat, whisk in 1 tbs cold cubed unsalted butter to finish and give the sauce sheen. Taste and adjust seasoning.

To plate: spoon a portion of truffle mashed potatoes in the center, fan the rested steak sliced or whole, arrange seasonal vegetables, spoon the red wine jus over the steak and around the plate. Finish with microgreens, a drizzle of olive oil, a pinch of sea salt flakes and a crack of black pepper.

Dessert — Lemon Panna Cotta with Berry Compote

Bloom Gelatin

Place 1 tbs cold water in a small bowl and sprinkle 1 tsp powdered gelatin over the surface. Let sit 3–5 minutes to bloom.

Make Panna Cotta

In a small saucepan, combine 3/4 cup heavy cream, 1/4 cup whole milk and 2 tbs granulated sugar. Warm over medium heat until the sugar dissolves and the mixture is steaming but not boiling (do not boil). Remove from heat and stir in 1/4 tsp vanilla extract and 1/2 tsp lemon zest.

Add the bloomed gelatin to the warm cream mixture and whisk until completely dissolved. Let cool 2–3 minutes, then pour into a small ramekin or serving glass. Chill in the refrigerator at least 2 hours (or until set) — for corporate service prepare ahead and hold chilled.

Berry Compote

In a small saucepan combine 1/2 cup mixed berries, 1 tbs granulated sugar and 1 tsp lemon juice. Cook over medium heat, stirring occasionally, until berries break down and juice thickens slightly, 4–6 minutes. Remove from heat and cool to room temperature; chill if making ahead.

To serve: unmold panna cotta if desired onto a plate or serve in the ramekin. Spoon a tablespoon of berry compote over or beside the panna cotta. Garnish with a small mint leaf. Serve chilled.

Timing for a corporate lunch/dinner: begin starter service immediately upon seating; the chowder takes about 20 minutes from start to finish and can be prepared in advance and reheated gently.
