Assemble essentials the night before: pack your daypack with water bottle, portable charger, map and sun protection. Wear comfortable walking shoes and breathable clothing appropriate for warm weather.

Plan to meet your guide at the prearranged meeting point in the Colonial Zone 10 minutes early. Confirm reservation and any accessibility needs.

During the walk (typically 1.5–2 hours), stay hydrated, follow the guide’s pace, and use the hat/umbrella for sun or light rain. Note points of interest you want to revisit after the tour or before dinner.

Prepare mise en place

Wash and dry herbs and tomatoes. Peel and thinly slice potatoes and onion for the tortilla. Zest and juice the lemon; chop parsley; slice bread, chorizo and manchego. Clean and pat-dry shrimp and mixed seafood. Warm the stock and infuse saffron in a few tablespoons of warm stock.

Gambas al Ajillo (Garlic Shrimp)

Heat 2 tbs olive oil in a large skillet over medium heat. Add half the sliced garlic and cook until fragrant and lightly golden (about 1 minute). Add smoked paprika and stir briefly. Increase heat to medium-high, then add shrimp in a single layer. Cook 1–2 minutes per side until pink and just cooked through. Finish with a squeeze of lemon juice, chopped parsley, a pinch of salt and transfer to a warm serving dish. Serve with crusty bread to soak up oil and juices.

Pan con Tomate & Cheese/Chorizo Board

Toast slices of crusty bread lightly. Rub cut side of a garlic clove over the warm toast, then rub with halved ripe tomato until bread absorbs tomato pulp. Drizzle lightly with olive oil and a pinch of salt. Arrange manchego, sliced chorizo, marinated olives, cherry tomatoes and optional anchovies on a board. Serve immediately.

Spanish Tortilla (Potato & Onion Omelette)

In a nonstick skillet, add 3 tbs olive oil and heat over medium. Add sliced potatoes and onions, season with 1 tsp fine sea salt, and cook gently, stirring occasionally, until potatoes are tender but not browned (about 15–20 minutes). Beat eggs in a bowl and season with pepper. Using a slotted spoon, transfer potatoes and onions into the eggs, mixing gently and letting sit 5 minutes. Remove excess oil from skillet, add a little of the reserved oil back, pour the potato-egg mixture into skillet and cook over medium-low until edges set (about 6–8 minutes). Run a spatula around edges, invert onto a plate, then slide back into skillet to cook the other side for 4–5 minutes. Let rest 5 minutes, then slice into wedges.

Seafood Paella (Stovetop)

Use a wide shallow pan if available. Heat 2 tbs olive oil over medium heat. Add remaining garlic and a bit of chopped onion; sauté 1–2 minutes until translucent. Stir in tomato sofrito and cook 2–3 minutes. Add rice and stir to coat grains. Pour in warm stock with saffron and the white wine, season with salt and pepper. Bring to a gentle simmer and cook, uncovered, without stirring vigorously, for about 10 minutes. Nestle mixed seafood and shrimp into the rice, tucking mussels/clams hinge-side down. Continue cooking until rice is tender and seafood is cooked and shells open (another 8–10 minutes). If the top is too dry, add a splash of stock and cook a few more minutes. Remove from heat, cover with a clean towel and let rest 5 minutes. Garnish with chopped parsley and serve with lemon wedges.

Plating & Serving

Arrange tapas on a shared board: garlic shrimp, pan con tomate slices, tortilla wedges, manchego, chorizo and olives. Present paella in its pan in the center. Offer wine, cava and water. Encourage communal serving so guests can taste multiple items. Serve flan and coffee or digestif to end the meal.

Chill the white wine and cava ahead of time. Serve white wine with seafood and lighter tapas; cava is ideal for toasting or with fried or richer bites. Provide still or sparkling water throughout the meal and offer espresso or a small digestif with dessert.
