Place the fresh goat cheese and softened cream cheese in a medium bowl. Use a fork or small spatula to break up the cheeses and combine until smooth and homogenous.

Add honey, chopped thyme, lemon zest, black pepper, and salt. Mix thoroughly until the honey and seasonings are evenly distributed. Taste and adjust seasoning — add a touch more honey if you prefer sweeter bites or a pinch more salt for balance.

Transfer the cheese mixture to a piping bag fitted with a medium round tip (or a resealable plastic bag with the corner snipped). This will make filling the cups quicker and neater. If you prefer, chill the mixture 15–20 minutes so it firms slightly for easier piping.

If using frozen mini phyllo cups, bake or crisp according to package directions until lightly golden and fully crisp. Let cool to room temperature. If using pre-baked tart shells, ensure they are at room temperature before filling.

Choose your topping approach: thinly slice the pear or apple crosswise into small slivers or half-moons about 1–2 inches long. Lightly toss slices with a few drops of lemon juice to prevent browning if not assembling immediately.

Pipe or spoon approximately 1 tablespoon of the goat cheese mixture into each mini cup. Level lightly with the back of a spoon if needed. The recipe yields about 24 bites; adjust amount per cup if your shells are larger or smaller.

Top each filled cup with a small piece of pear or apple, a sprinkle of chopped toasted walnuts (about 1/4 teaspoon per cup), and a few microgreens or a tiny sprig of thyme. Drizzle a scant amount of honey (about 1/8 teaspoon) over each bite for a glossy finish and a touch of sweetness.

Arrange finished Goat Bites on a serving platter. If you made them ahead, cover loosely and refrigerate up to 4 hours; add microgreens and final honey drizzle just before serving to keep them fresh.

For a savory-forward version, fold small torn pieces of prosciutto into the goat cheese mixture or tuck a small sliver of prosciutto on top of each filled cup instead of the fruit. Finish with a tiny drizzle (about 1/8 teaspoon) of balsamic reduction over each bite.
