Method
Breaded Apple Slices
Prepare apples
Peel (optional) and core the apples. Slice into 1/4-inch (about 6 mm) thick rounds or half-moon slices if preferred. You should have roughly 10–14 slices (about 1.5 cups). Immediately toss the slices with 1 tsp lemon juice to prevent browning; set on a paper towel to drain excess moisture for 5 minutes.
Set up breading station
Place the 1/2 cup flour in a shallow dish and season with 1/8 tsp salt. Lightly beat the egg in a second shallow dish. In a third dish, combine 1 cup panko, 1 tbs sugar, and 1/2 tsp cinnamon; mix well.
Bread the apple slices
Dredge each apple slice first in flour (tap off excess), then dip into the beaten egg, letting excess drip, and finally press into the panko mixture to coat thoroughly. Place breaded slices on a baking tray and let rest 5 minutes so coating adheres.
Fry until golden
Heat 1/2 cup vegetable oil in a skillet over medium heat until shimmering (about 325–350°F or moderate). Fry apple slices in batches (do not crowd) about 1.5–2 minutes per side until golden and crisp. Transfer to a paper towel-lined plate and season lightly with a pinch of salt. Keep warm in a 200°F (90°C) oven if making multiple batches.
Onion & Ginger Textures
Prepare onion and ginger
Thinly slice the yellow onion into very fine julienne (about 1/8 inch). Mince the fresh ginger finely or grate it to yield about 1 tablespoon. Thinly slice the red onion into rounds for crisping (or very thin rings). Pat red onion rings dry.
Make soft onion-ginger compote
In a small nonstick skillet over low heat, warm 1 tsp olive oil. Add the yellow onion and a pinch (1/16–1/8 tsp) salt and sweat gently for 6–8 minutes until soft and translucent but not browned. Stir in the grated ginger and cook 30–45 seconds to release aroma. Remove from heat and reserve; this will be a soft textured bed for the apples.
Crisp red onion chips
In a small heavy skillet or a separate frying pan, add a thin film of oil and heat over medium-high. Add the thin red onion rings in a single layer and cook without stirring for 1–2 minutes until edges brown and they crisp; flip and crisp the other side 30–60 seconds. Remove and drain on paper towels; these provide a crunchy onion texture.
Parmesan Fondue
Make a light roux
In a small saucepan over medium-low heat melt 1 tbs butter. Stir in 1 tsp flour and cook 30–45 seconds to remove raw flour taste, whisking constantly so it stays smooth.
Finish fondue
Whisk in 1 tbs white wine (optional) and then slowly add 3/4 cup whole milk, whisking to combine. Bring to a gentle simmer and cook 1–2 minutes until slightly thickened. Lower heat and whisk in 3/4 cup grated Parmesan a handful at a time until fully melted and smooth. Season with 1/8 tsp black pepper and a tiny pinch (1/16 tsp) nutmeg if using. Keep warm over very low heat, stirring occasionally; the fondue should be pourable but coating.
Sautéed Shrimp
Season shrimp
Pat shrimp dry and season with 1/8 tsp salt and 1/16 tsp black pepper. Zest half a lemon to get about 1/2 tsp lemon zest and have lemon wedges ready.
Sear shrimp
Heat 1 tsp olive oil and 1 tbs butter in a medium skillet over medium-high heat until foaming. Add minced garlic and sauté 15–20 seconds until fragrant (do not brown). Add shrimp in a single layer and cook about 1.5–2 minutes per side (depending on size) until opaque and pink with a slight golden sear. Remove from heat and toss with lemon zest and 1 tsp chopped parsley. Keep warm.
Assembly & Finishing
Place a small spoonful of the soft onion-ginger compote in the center of each plate as a base (or one larger bed if plating family style). Arrange 3–4 warm breaded apple slices on top of the compote.
Spoon warm Parmesan fondue over the apple slices—about 1–2 tablespoons per serving—so they are lightly coated but still retain crisp edges.
Top with 4–5 sautéed shrimp per serving (or distribute evenly if serving family style). Scatter a few crisp red onion chips on top for texture and a small handful of microgreens or salad greens for freshness.
Finish with a light dusting of extra grated Parmesan (1 tsp) and a squeeze of lemon from the wedge to taste. Serve immediately so apples remain crisp and fondue warm.
