Method
Ice Cream Base
Combine dairy
In a medium saucepan, whisk together 2 cups whole milk, 2 cups heavy cream, and 3 tablespoons granulated sugar until the sugar begins to dissolve.
Add flavor and salt
Remove the pan from the heat. Stir in 1 teaspoon pure vanilla extract and a pinch of fine sea salt. If making a coffee flavor, dissolve 1 teaspoon espresso or strong coffee into the warm base at this step.
Chill the base
Transfer the warm base to a heatproof container, cover, and chill in the refrigerator until thoroughly cold, at least 2 hours or preferably overnight. Chilling ensures better texture in the churned ice cream.
Churn
Once the base is fully chilled, pour it into your ice cream maker and churn following the manufacturer's instructions. Typical churn time is 20–30 minutes, until the mixture reaches a soft-serve consistency.
Incorporate mix-ins
During the last 3–5 minutes of churning, add your chosen mix-ins (see Mix-ins section) so they are evenly distributed without becoming overly broken down.

Fruit swirl or fruit-flavored
If using fruit purée or jam (1 cup), gently warm the purée in a small saucepan or microwave to loosen it for easier swirling. For a fruit swirl, fold the purée into the churned ice cream in alternating layers — do not fully blend to preserve ribbons of fruit. For full fruit flavor throughout, stir the purée into the chilled base before churning (ensure it's fully chilled before churning).
Chocolate or chips
Add chocolate chips or 3 tablespoons chopped chocolate in the last 3–5 minutes of churning so they distribute without melting into the base. For a chocolate ripple, melt 2–3 tablespoons of chocolate with 1 teaspoon of neutral oil to create a pourable ripple and layer it into the ice cream before the final freeze.
Add 3 tablespoons chopped toasted nuts or 1 cup crushed cookies in the last 3–5 minutes of churning so they remain textural. For larger chunks, fold them in by hand after churning before transferring to the freezer container.
Serving suggestions
Scoop the ice cream into bowls or cones. Let scooped ice cream sit 2–3 minutes at room temperature for easier scooping if very firm. Store leftover ice cream in an airtight container in the freezer for up to 2 weeks for best texture.
