Savory Canapés

Prepare cream cheese spread

In a bowl, combine softened cream cheese, Dijon mustard, chopped dill, lemon zest, capers (reserve a few for garnish) and freshly ground black pepper. Stir until smooth and taste for seasoning; adjust salt if needed.

Assemble smoked salmon canapés

Lightly toast the brioche rounds or baguette slices until golden. Spread about 1 tablespoon of the cream cheese mixture on each toast. Fold a slice of smoked salmon into a rosette and place on top. Garnish each with a few capers, a small dill sprig, and a grind of black pepper. Arrange on a platter.

Prosciutto, fig jam & goat cheese canapés

Spread a thin layer (about 1 teaspoon) of fig jam on half of the toasted rounds. Crumble or spread about 1 tablespoon of soft goat cheese on the other half, then drape a half-slice of prosciutto over each. For each canapé, place the prosciutto-topped toast on a jambed toast or serve individually. Drizzle with a little honey and sprinkle chopped toasted walnuts and microgreens. Use a cocktail pick where helpful to secure layers.

Chocolate squares

Melt dark chocolate gently in a double boiler or microwave in 30-second intervals, stirring until smooth. Spoon or pipe a small dollop into the bottom of each phyllo shell; let set at room temperature or refrigerate briefly. Sprinkle a pinch of sea salt on each when set.

Strawberry mascarpone tartlets

Whip mascarpone with powdered sugar and vanilla until fluffy but still pipeable. Spoon or pipe about 1 tablespoon of mascarpone into each tartlet shell. Top with a halved strawberry and a tiny mint leaf. Chill until service.

Colonial Rum Sour (serves 12)

In a large pitcher or shaker, combine 500 ml aged rum, 250 ml fresh lime juice, 200 ml simple syrup and 4 egg whites if using. If using egg whites, perform a dry shake first (no ice) for 10–15 seconds to build foam, then add ice and shake vigorously until chilled. Strain into individual rocks glasses over fresh ice (about 12 servings, roughly 60–65 ml spirit-based cocktail per guest). Add 1–2 dashes of Angostura bitters on the foam of each and garnish with a lime wheel and mint sprig.

Sparkling Mint Lime Spritz (non-alcoholic)

In a large pitcher, lightly muddle half of the mint leaves with 100 ml of simple syrup and 150 ml fresh lime juice. Add sparkling water (1.5 L) and stir gently. Serve over ice in highball glasses with a lime wheel and a mint sprig.

Ginger Cooler (non-alcoholic)

For guests preferring a ginger option, mix 150 ml ginger syrup with 500 ml sparkling water or tonic in a pitcher, add ice and garnish with lime wheels. Taste and adjust ratio for desired sweetness/spice.

Iced Coffee Service

Chilled cold-brew coffee may be offered on the side; serve over ice with optional tonic water or milk on the side for guests to customize.

Service & Final Assembly

Timing: Prepare spreads, jam, and mascarpone mix ahead (2–4 hours). Toast bread and assemble canapés 30–45 minutes before guests arrive to keep toasts crisp. Refrigerate assembled tartlets and chocolate shells until service. Store smoked salmon covered on ice until placing on canapés.

Plating: Use long trays for savory canapés and separate tiered stands for sweet canapés to encourage sharing. Place cocktail pitchers on a side station with ice bucket nearby. Keep garnishes (extra dill, lemon wedges, mint) on small plates for final touches.

Service flow: Offer a welcome Colonial Rum Sour to toast on arrival (prepare a batch and shake in small batches to maintain foam). Follow with circulating trays of savory canapés and place sweet canapés at the coffee/treat station. Refill ice and beverages as needed; replenish canapés in small batches to retain freshness.
