Method

Prepare Pasta & Oven

Preheat and boil

Preheat the oven to 425°F (220°C). Bring a large pot of salted water to a rolling boil (about 1 tablespoon salt per 4 quarts).

Cook fettuccine

Add the fettuccine and cook until just shy of al dente (about 2 minutes less than package directions). Reserve 1 cup of pasta cooking water, then drain the pasta and set aside.

Pancetta & Mushrooms

In a large skillet over medium heat, add the diced pancetta. Cook, stirring occasionally, until the fat renders and the pancetta is crisp about 6–8 minutes. If using the vegetarian substitution, heat 1 tablespoon olive oil and crisp the smoked tempeh or vegetarian bacon similarly for 4–6 minutes.

Using a slotted spoon, transfer most of the rendered fat to a heatproof bowl, leaving about 1 tablespoon in the skillet. Add 1 tablespoon olive oil and 1 tablespoon butter to the skillet. Add the sliced cremini mushrooms in a single layer and let them brown undisturbed for 2–3 minutes, then stir and continue cooking 3–4 minutes until golden and any moisture has mostly evaporated.

Add the minced garlic and thyme to the mushrooms and cook 30–45 seconds until fragrant. Return the cooked pancetta (or vegetarian substitute) to the skillet, toss to combine, then remove the skillet from the heat.

Make Carbonara Cream & Combine

In a medium bowl, whisk together the heavy cream and egg yolks until smooth. Stir in the grated Gouda, half the Parmesan, the freshly ground black pepper, and the teaspoon of salt. The mixture will be thick — this is fine.

Add the drained fettuccine to the skillet with mushrooms and pancetta. Pour the cream-egg-Gouda mixture over the pasta and toss gently to coat. If the sauce seems too thick, add reserved pasta water 2 tablespoons at a time until the sauce is glossy and coats the noodles (you may not need the whole cup). The residual heat will start to gently warm the egg mixture — keep the pan off direct heat to avoid scrambling the eggs.

Gratinate & Finish

Transfer the coated pasta to a 9x13-inch baking dish (lightly buttered or oiled). Sprinkle the shredded mozzarella evenly over the top, followed by the remaining grated Parmesan and the optional dry bread crumbs for extra crunch.

Bake in the preheated 425°F (220°C) oven for 8–12 minutes, until the cheese is melted and bubbling and edges are lightly browned. For a golden crust, place under the broiler for 1–2 minutes—watch carefully to prevent burning.

Remove from the oven and let rest 3–5 minutes. Sprinkle chopped parsley and lemon zest, if using, over the gratinated carbonara. Taste and adjust seasoning with additional black pepper or salt if needed.

Serve

Scoop portions onto plates or serve family-style straight from the baking dish. Offer extra grated Parmesan at the table. Leftovers can be refrigerated in an airtight container for up to 3 days; reheat covered in a 350°F oven until warmed through.
