Method
Shrimp Cocktail Shots (8 servings / 8 shots)
Poach and chill shrimp
Bring a medium pot of water to a gentle simmer with a pinch of salt. Add the shrimp and poach until just opaque, about 1 to 2 minutes depending on size. Immediately transfer shrimp to an ice bath (use ice and cold water) to stop cooking and chill, about 3 minutes. Drain and pat dry. Keep chilled until assembling.
Make cocktail sauce
In a small bowl, combine cocktail sauce, prepared horseradish, lemon juice, Worcestershire sauce and hot sauce (if using). Taste and adjust horseradish or hot sauce for heat. Spoon about 1 tablespoon of sauce into each shot glass or small serving vessel.
Cured Salmon on Brioche (8 canapés)
Prepare lemon-dill cream
In a bowl, stir together the cream cheese, lemon zest, and chopped dill until smooth and spreadable. Season with a pinch of black pepper (about 1/8 tsp).
Toast brioche and assemble
Lightly brush brioche rounds with olive oil and toast in a 180°C/350°F oven or on a skillet until lightly golden, about 3 to 4 minutes. Spread approximately 1 tablespoon of the lemon-dill cream on each warm brioche. Fold or layer a thin slice of cured salmon on top. Finish each canapé with a few capers and a twist of freshly ground black pepper. Serve at room temperature within 30 minutes.
Mini Angus Sliders (6 sliders)
Form and cook patties
Divide the ground Angus beef into six equal portions (about 75 g / 2.6 oz each). Gently form into slightly wide patties roughly the diameter of the slider buns, seasoning both sides with salt and pepper. Heat a skillet or griddle over medium-high heat and add olive oil. Cook patties 2 to 3 minutes per side for medium (adjust time for desired doneness). Place a slice of cheddar on each patty in the final 30 seconds and cover to melt.
Assemble sliders
Lightly toast the slider buns on the same skillet until golden. Spread a thin smear of mustard and ketchup on the bottom buns. Place the cheeseburger patty on each bottom bun, top with a dill pickle slice, and cap with the top bun. Serve warm; hold loosely covered for up to 20 minutes before serving to retain warmth.
Tuna Tartare with Sour Cream (6 servings / 6 spoons)
Prepare tuna mixture
Keep tuna well chilled. In a bowl, combine diced tuna, minced shallot, soy sauce, sesame oil, lime juice, chopped chives, salt and pepper. Gently fold to combine without mashing the tuna. Taste and adjust seasoning (a bit more soy or lime as desired). Chill for 5 to 10 minutes to let flavors meld, but do not sit too long to avoid texture change.
Plate with sour cream
Spoon about 1 tablespoon of sour cream into each serving spoon or small canapé cup as a base. Top with approximately 2 to 3 tablespoons of the tuna tartare. Sprinkle with toasted sesame seeds and a few microgreens or cilantro. Serve immediately, keeping chilled until just before serving.
Rotating Selections (makes ~6 additional assorted pieces)
Goat cheese and honey crostini
Spread about 1 tablespoon goat cheese on a toasted baguette slice. Drizzle with a little honey and top with a sliver of roasted red pepper. Garnish with a small sprig of thyme if available.
