Method

Prepare the Base

1

Heat the Milk and Cream

In a medium saucepan, combine 2 cups of whole milk and 1 cup of heavy cream. Heat over medium heat until the mixture is warm but not boiling, stirring occasionally.

2

Whisk Egg Yolks and Sugar

In a separate bowl, whisk together 4 large egg yolks and 3 tablespoons of granulated sugar until the mixture turns pale and slightly thickened.

3

Temper the Egg Mixture

Slowly pour the warm milk and cream mixture into the egg yolk mixture, whisking constantly to temper the eggs. This prevents the eggs from scrambling.

4

Cook the Mixture

Return the tempered mixture to the saucepan over low heat. Cook, stirring constantly, until the mixture thickens enough to coat the back of a spoon (about 5-7 minutes).

5

Add Vanilla Extract

Once thickened, remove from heat and stir in 1 teaspoon of vanilla extract. Allow the mixture to cool to room temperature.

Flavoring the Gelato

6

Prepare Flavor Variations

Choose your desired flavor. For strawberry gelato, puree 1 cup of fresh strawberries in a blender and mix with the cooled base. For chocolate gelato, fold in 1 cup of dark chocolate chips. For matcha gelato, whisk in 2 teaspoons of matcha powder.

7

Add Additional Flavors

For a caramel flavor, swirl in caramel sauce to taste into the base after mixing in your primary flavor.

Chill and Serve

8

Chill the Mixture

Pour the flavored gelato mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

9

Transfer to Cups

Scoop the gelato into the prepared disposable gelato cups, filling each cup to the top.

10

Freeze to Firm Up

Place the filled cups in the freezer for at least 2 hours to firm up before serving.

11

Serve

Once firm, serve the gelato cups with spoons and enjoy your housemade gelato.
