Simple Lemonade Base

Make lemon juice

Roll lemons on the counter to soften, cut in half and juice until you have 1 cup of fresh lemon juice (about 4–6 medium lemons). Strain seeds and excess pulp through a fine mesh sieve if you prefer a clear lemonade.

Dissolve sugar

In a small heatproof bowl or measuring cup, combine 3 tablespoons granulated sugar with 1/4 cup warm water. Stir until the sugar is completely dissolved to make a simple syrup-like mixture. This ensures no graininess in the lemonade.

Combine and dilute

In a 2-quart pitcher, pour the fresh lemon juice and the dissolved sugar mixture. Add 3.5 cups cold water and stir thoroughly. Taste and adjust: for sweeter lemonade add up to 1 tablespoon more sugar (dissolve first), for tarter add up to 1/4 cup more water or more lemon juice if desired.

Chill

Refrigerate the lemonade for at least 30 minutes to blend flavors. If you're serving immediately, add plenty of ice to chill quickly (see optional finish).

When ready to serve, fill glasses with ice. Pour lemonade over the ice, garnish each glass with a lemon slice and a sprig of mint if using. Stir gently and serve cold.
