Method
Meatballs
Mix
In a large bowl combine ground meat, breadcrumbs, milk, egg, Parmesan, minced garlic, chopped parsley, oregano, salt, and pepper. Mix gently with your hands or a spoon until just combined — avoid overworking to keep meatballs tender.
Shape
Form the mixture into evenly sized meatballs about 1 1/4 to 1 1/2 inches in diameter (makes roughly 18–20 meatballs). Place on a tray or plate while you heat the pan.
Brown
Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add meatballs in a single layer without crowding (work in batches if needed). Cook, turning occasionally, until nicely browned on all sides, about 6–8 minutes. They do not need to be fully cooked through at this stage. Transfer browned meatballs to a plate.
Marinara Sauce
Simmer sauce
Stir in crushed tomatoes, tomato paste, dried basil, dried oregano, sugar (if using), salt, black pepper, and red pepper flakes. Bring to a gentle simmer. Return the browned meatballs to the pan, nestling them into the sauce so they are mostly submerged.
Finish
Reduce heat to low, cover partially, and simmer gently for 20–25 minutes, turning the meatballs once halfway through, until meatballs are cooked through (internal temperature 160°F/71°C for beef) and the sauce has thickened slightly. Taste and adjust seasoning.
Fries (side)
Prepare
If baking fries: preheat oven according to package or to 425°F (220°C). Toss fresh fries with 2 tablespoons oil and spread in a single layer on a baking sheet. If frying: heat oil in a deep fryer or heavy pot to 350°F (175°C).
Cook
Bake fries until golden and crisp, about 20–30 minutes, turning once. If frying, cook in batches until golden, 3–5 minutes per batch. Drain on paper towels and immediately season with salt.
Assembly and Melt
Toast rolls (optional)
Preheat broiler. Spread softened butter inside the hoagie rolls. Place rolls cut-side up on a baking sheet and broil 1–2 minutes until lightly toasted and golden — watch carefully to avoid burning.
Fill
Spoon 3–4 meatballs (depending on roll size) into each roll, spooning generous amount of marinara over the meatballs so they are well coated.
Add cheese & melt
Top each filled roll with a generous sprinkle of shredded mozzarella and a tablespoon of grated Parmesan. Place assembled hoagies on a baking sheet and broil 2–4 minutes until the cheese is melted and bubbly and beginning to brown. Alternatively, bake at 375°F (190°C) for 8–10 minutes to melt cheese.
Garnish & serve
Remove from oven, garnish with chopped fresh basil or parsley if desired. Serve hot with fries on the side.
