Prepare dough

Combine warm water (about 105–115°F/40–46°C), sugar, and instant yeast in a small bowl. Stir and let sit 5–7 minutes until foamy. In a large bowl or stand-mixer bowl, whisk together flour and salt. Add foamy yeast mixture and 1 tablespoon olive oil. Mix until a shaggy dough forms; knead by hand 6–8 minutes or with a dough hook 4–5 minutes until smooth and elastic.

First rise

Form dough into a ball, lightly oil the bowl, place dough back in, cover with plastic wrap or a damp towel, and let rise in a warm place until doubled, about 45–60 minutes.

Shape breadsticks

Punch dough down gently. On a lightly floured surface, divide dough into 5 equal pieces (about 2.25–2.5 oz each). Roll each piece into a tight rope about 9–10 inches long and roughly 1 inch thick, tapering the ends slightly if desired. Place on a parchment-lined baking sheet about 1 inch apart.

Second rise & topping

Cover shaped sticks with a clean towel and let rise 20–30 minutes until puffy. Preheat oven to 400°F (200°C). Mix melted butter with garlic powder (if using). Brush risen sticks with half the butter mixture. Sprinkle evenly with grated Parmesan and a light dusting of coarse salt if using.

Bake

Bake in preheated oven for 12–15 minutes, until golden brown and the bottoms are set. If you prefer a deeper golden top, broil 30–60 seconds watching closely.

Finish

Remove from oven and brush immediately with remaining melted butter. Transfer to a rack and let cool 5 minutes before serving with dips.

Parmesan Dipping Sauce

In a small bowl, combine mayonnaise, sour cream, grated Parmesan, minced garlic, lemon juice, and chopped parsley. Whisk until smooth. Season with salt and black pepper to taste. Chill at least 10–15 minutes to let flavors meld. Stir before serving alongside breadsticks.

Tomato-Basil Dipping Sauce

Heat 1 tablespoon olive oil in a small saucepan over medium heat. Add minced garlic and cook 30–45 seconds until fragrant but not browned. Add crushed tomatoes, dried oregano, red pepper flakes (if using), salt, pepper, and sugar. Simmer gently, uncovered, for 8–10 minutes to thicken slightly and develop flavor. Remove from heat and stir in fresh basil. Taste and adjust seasoning. Serve warm or at room temperature.
