Prepare the chicken

Pat the 2 chicken breasts dry with paper towels. If they are unevenly thick, place each breast between two pieces of plastic wrap and pound gently with a meat mallet or rolling pin until an even thickness of about 1/2 inch (1.3 cm). This promotes even cooking.

Make the marinade

In a small bowl, combine 2 tablespoons olive oil, 1 tablespoon lemon juice, 2 minced garlic cloves, 1 teaspoon kosher salt, 1/2 teaspoon black pepper, 1 teaspoon dried oregano, and 1/2 teaspoon smoked paprika. Whisk until blended.

Marinate the chicken

Brush or rub the marinade all over both chicken breasts, coating both sides. Place the breasts in a shallow dish or resealable bag and let sit at room temperature for 15–20 minutes, or refrigerate for up to 2 hours. If refrigerated, bring back to room temperature for 15–20 minutes before cooking.

Preheat grill or skillet

Preheat an outdoor grill to medium-high (about 400°F / 200°C) or heat a heavy skillet or cast-iron pan over medium-high heat. If using a grill pan/skillet, add a light drizzle (about 1 teaspoon) of olive oil to the pan and let it get hot until shimmering.

Grill the chicken

Place the chicken breasts on the hot grill or skillet. Cook without moving for 4–6 minutes on the first side until well browned and grill marks form. Flip and cook another 4–6 minutes on the second side. Total cooking time will vary with thickness; aim for an internal temperature of 165°F (74°C) measured at the thickest part with an instant-read thermometer.

Finish and rest

When the chicken reaches 165°F (74°C), remove from heat and transfer to a cutting board. If desired, top each breast with 1 tablespoon butter to melt over the hot chicken. Tent loosely with foil and let rest 5 minutes — this lets juices redistribute and keeps the chicken moist.

Serve

Slice the chicken against the grain and garnish with 1 tablespoon chopped fresh parsley, if using. Serve whole or sliced as an addition to salads, bowls, sandwiches, or as a main with sides.
