Cocktail

Method

Cocktail

  1. 1

    Mix base

Add gin, crème de pêche, fresh lemon juice, house lavender syrup, and cranberry juice into a cocktail shaker. Fill the shaker about two-thirds with ice.

  2. 2

    Shake

Secure the shaker and shake vigorously for 12–15 seconds until the outside of the shaker feels cold and slightly frosted.

  3. 3

    Prepare glass

Fill a chilled coupe or Collins glass with fresh ice (if using Collins) or leave neat for coupe. If serving over ice, add about 3–4 large ice cubes.

  4. 4

    Strain

Double-strain the shaken mixture into the prepared glass using a Hawthorne and fine mesh strainer to remove ice shards and any lavender bits.

Garnish & Finish

  1. 5

Top the strained cocktail with 2 oz citrus sparkling water to give a bright effervescent 'citrus bubble' finish. Pour gently to preserve bubbles.

  2. 6

Garnish with a lemon wheel on the rim, two cranberries dropped into the drink, and a sprig of fresh lavender laid across the rim or floated on top. Serve immediately.
