Citrus Oleo Saccharum

    Prepare the limes: wash and dry 4 large limes. Using a microplane or vegetable peeler, remove the zest in long strips or fine shavings, taking care to avoid the bitter white pith.

    Combine sugar and zest: In a medium nonreactive bowl, layer the granulated sugar and lime zest. Press the zest into the sugar with a spoon so the oils begin to release and coat the sugar.

    Macerate: Cover the bowl and let sit at room temperature for 1 to 3 hours, stirring or pressing the mixture every 20–30 minutes. The sugar will turn fragrant and slightly moist as it absorbs the citrus oils.

    Add a touch of water (optional): If the mixture seems dry and you want a slightly more fluid extract, stir in 2 tablespoons of water to help dissolve some sugar and mobilize the oils. This is optional and depends on the texture you prefer.

    Extract and store: After sufficient maceration and oil release, press the sugar through a fine sieve to separate the zest solids from the flavored sugar. Save the fragrant sugar for other uses (cocktails, baking). Evaluate the quantity of liquid/oil collected—if little free liquid appears, stir in 3–4 tablespoons of fresh lime juice to create 3–4 ounces of usable Citrus Oleo Saccharum. Transfer about 0.75–1 oz per cocktail into a sanitized jar, cover, and refrigerate. Use within 2 weeks.

Gimlet Frost Cocktail

    Chill glass: If desired, rim a coupe or rocks glass with a lime wedge and dip in salt or sugar. Chill the glass in the freezer while you prepare the cocktail.

    If making a frozen/slushy Gimlet Frost (blender)

    Combine 3 oz gin, 1 oz fresh lime juice, 0.75 oz Citrus Oleo Saccharum, 0.25 oz simple syrup (optional) and 1.5 cups crushed ice in a blender. Pulse or blend on low for 8–12 seconds until a fine slushy texture forms. Taste and adjust sweetness with up to another 0.25 oz simple syrup if needed.

    If making a shaken, chilled Gimlet Frost

    Fill a shaker with coarse ice. Add 3 oz gin, 1 oz lime juice, and 0.75 oz Citrus Oleo Saccharum (omit or reduce simple syrup). Firmly shake for 12–18 seconds until well chilled. Strain into the chilled glass over crushed ice for a frosty appearance, or double strain into the chilled coupe if you prefer no ice in the glass.

    Garnish and serve: Finish with a lime wheel or a tight lime twist expressed over the drink to release oils. Serve immediately while frosty. If you prepared extra Citrus Oleo Saccharum, keep refrigerated for future cocktails.

    Notes on substitutions: For a brighter, more herbal touch use a white rum instead of gin. Adjust Citrus Oleo Saccharum amount between 0.5–1 oz to taste; it concentrates citrus oil flavor so a little goes a long way.
