Miso-Apple Syrup
Make the syrup
Combine the apple juice and sugar in a small saucepan over medium heat. Stir until the sugar fully dissolves and the mixture comes to a gentle simmer. Remove from heat and let cool for 2–3 minutes.
Whisk the white miso paste with the warm apple-sugar mixture until completely smooth and incorporated. Taste and add the lemon juice to brighten and balance the sweetness and umami. If miso flavor is too strong, add up to 2 tablespoons more apple juice or a touch more sugar to round it off.
Cool to room temperature, then transfer to a clean jar. Refrigerate until chilled. Syrup will keep 7–10 days refrigerated.
Cocktail Assembly
Chill a Collins or highball glass by filling it with ice and setting aside, or place the glass in the freezer for a few minutes.
In a cocktail shaker, add sake, Calvados, miso-apple syrup, fresh lime juice, yuzu juice, and orange blossom water. Fill the shaker with ice.
Shake vigorously for 10–12 seconds until the outside of the shaker is well chilled and slightly frosted. This ensures proper dilution and integration of the syrup and juices.
Discard ice from the chilled serving glass. Strain the shaken mixture into the glass over fresh ice (use large cubes if available).
Top gently with 3 oz Fever-Tree Yuzu & Lime (or similar yuzu soda). Stir once gently with a bar spoon to combine, preserving the effervescence.
Taste and adjust: if the cocktail needs more brightness, add 1/4 oz lime or yuzu juice; if it needs sweetness, add 1/4 oz miso-apple syrup and stir lightly.
Garnish & Finish
Garnish with a thin apple slice or fan laid on the rim or floated on top. If desired, microplane a light dusting (about 1/2 tsp worth) of lemon or yuzu zest over the drink to enhance aromatics.
Serve immediately with a straw or short stirrer. The Crossing Wind Cooler is a refreshing, slightly umami, floral-yet-fruity highball designed to be sipped slowly.
