    Prepare blini

    Warm blini gently: heat a nonstick skillet over low heat and warm blini 20–30 seconds per side until just warm and slightly springy. Keep covered with a clean towel to remain soft until plating.

    Butter and season

    Soften unsalted butter slightly. Stir in 1/4 tsp sea salt. Using a small offset or the back of a spoon, lightly smear about 1/8 tsp (roughly 0.5 tbs across all blini) of the salted butter on each warm blini so the surface is glossy but not oily.

    Assemble base

    Place warmed, buttered blini on chilled plate. Pipe or spoon approximately 1/2 tsp crème fraîche onto the center of each blini. Sprinkle a trace of chopped chives over the crème fraîche.

    Spoon caviar

    Using a mother-of-pearl or bone spoon, gently scoop about 1 teaspoon (≈0.008–0.01 cups each, total 0.05 cups) of caviar and place it atop the crème fraîche on each blini. Avoid metal utensils to prevent flavor alteration. If serving a single portion with the whole amount, present the caviar in the chilled bowl alongside the plated blini.

    Finish

    Add a tiny squeeze of lemon to taste on the side (not directly on caviar unless guest requests). Garnish each blini with a few microgreens or an edible flower for color if desired. Serve immediately so blini remain warm and caviar chilled.

Truffle Accent (seasonal)

    If using fresh truffle

    Using a truffle slicer or very sharp knife, shave ultra-thin slices of fresh truffle directly over the plated blini with caviar. Aim for one or two delicate shards per blini so the truffle aroma lifts the bite without overpowering the caviar. Serve remaining truffle slices on the side for guests who want more.

    If using truffle oil

    Lightly mist or dot 1/8 tsp of truffle oil across the plate (not directly on caviar) or gently brush an invisible shimmer on the rim of each blini using a fingertip to provide aromatic lift. Use sparingly — truffle oil is potent.
