    Temper and prepare

    Remove the caviar from the refrigerator and keep it in its tin until ready to plate. Let it sit at cool room temperature (about 18–20°C / 64–68°F) for 8–10 minutes to take the chill off; do not leave out longer. This brings out flavor without warming it to body temperature.

    Soften the unsalted butter at room temperature (10–15 minutes) until easily spreadable. Whisk crème fraîche with 1/2 teaspoon of the fine sea salt and the white pepper in a small bowl; taste and adjust salt sparingly.

    Just before plating, gently stir the caviar with the softened butter using the back of a spoon to coat the eggs lightly (this mellows salinity and adds silk). Do not mash or overwork — aim to keep eggs intact.

    Fold the finely snipped chives into the crème fraîche mixture and hold chilled until assembly.

Truffle Components

    Using a very sharp knife or truffle slicer, shave the fresh truffle into very thin slices. Keep the slices flat on a plate and cover lightly with plastic wrap to prevent drying.

    Lightly brush or mist the truffle slices with the truffle oil (use sparingly — about 1/2 tsp divided among the slices) to enhance aroma. Do not saturate.

Carriers (choose one or offer all for service)

    If using brioche: lightly toast the rounds until just golden, then spread a thin film of the softened butter on each round to add richness and to protect the bread from moisture.

    If using blinis: warm gently in a 150°C (300°F) oven for 3–4 minutes or in a skillet on low just until pliable. Do not overheat.

    If using potato crisps: select high-quality, plain or lightly salted crisps. Do not add additional moisture on top of crisps.

Assembly & Service

    Portioning: plan on 3 teaspoons of caviar per 2–3 canapés as a tasting portion; for a plated single portion allow 1/2–3/4 tsp per bite. For this recipe quantities: assemble 6–8 small canapés.

    To assemble each canapé: place carrier on a chilled serving plate. If using brioche or blini, spread ~1/2 tsp of the chive crème fraîche in the center to form a small nest (this protects the carrier and complements the caviar). If using a crisp, place a tiny quenelle (about 1/4 tsp) or a dot instead.

    Spoon 1/2 teaspoon of the butter-coated caviar gently on top of the crème fraîche nest, keeping eggs intact. Use a mother-of-pearl or non-metal spoon if available to avoid metallic taste; otherwise use a small wooden spoon.

    Top each caviar mound with one or two thin truffle slices. Lightly finish with a tiny pinch of lemon zest if using and a single microgreen for color.

    Serve immediately with chilled glasses and a neutral, unsalted palate cleanser (plain toast points or blinis). Keep leftover caviar refrigerated and use within manufacturer's recommended period; do not freeze.
