Cocktail

Method

Cocktail

  1. 1

    Build and shake

Add 2 oz Fortaleza Blanco, 0.5 oz peach liqueur, 0.5 oz pineapple amaro, 0.5 oz framboise, 0.5 oz fresh lime juice, 0.25 oz simple syrup and 1 dash Angostura bitters (if using) into a cocktail shaker. Fill the shaker with ice until about 3/4 full.

  2. 2

Shake vigorously for 12–15 seconds until the shaker is well-chilled and slightly frosted. This chills and dilutes the mixture to balance the spirit, fruit, and amaro components.

  3. 3

Double-strain the mixture into a chilled coupe or large Nick & Nora glass (or into a chilled flute if you prefer more sparkling contact) using a Hawthorne strainer and a fine mesh strainer to remove ice shards and any pulp.

Top & Garnish

  1. 4

    Top with rosé

Gently top the strained cocktail with 2 oz chilled Champagne rosé. Pour slowly down the side of the glass to preserve effervescence and to create a delicate layer of bubbles and color.

  2. 5

    Garnish and serve

Express a lemon or lime twist over the drink, run it around the rim if desired, and drop it into the glass. Optionally float a fresh raspberry on top for visual contrast. Serve immediately while the sparkling rosé is lively.
