Method
Prep and cook potatoes
Prepare potatoes
Peel the potatoes and cut them into uniform chunks about 2–3 cm (3/4–1 in). This ensures even cooking and a smooth texture.
Boil
Place the potato chunks in a large pot and cover with cold water by about 2 cm. Add the 1 tablespoon kosher salt. Bring to a gentle boil over high heat, then reduce to a simmer and cook until the potatoes are tender when pierced with a fork, about 15–20 minutes depending on chunk size.
Mash and finish
Warm dairy
While potatoes cook, gently warm the milk and optional cream in a small saucepan until just hot (do not boil). Keep the butter at room temperature or slightly warmed so it incorporates smoothly.
First pass
For the smoothest puree, press the potatoes through a potato ricer or food mill back into the pot or into a heatproof bowl. If you don't have those, use a fine-mesh sieve and a spatula or a sturdy potato masher for a creamier (slightly less silky) result.
Season
Taste and season with fine sea salt and freshly ground black pepper. Adjust butter and dairy amounts if needed for richness and mouthfeel.
Finish and serve
Transfer the potato puree to a warmed serving bowl. If desired, dot with a small piece of butter and sprinkle snipped chives on top. Serve immediately.
